Beneath the shell of the egg is a twin shell, the egg white, and in the very center of the egg is the yolk, on which the embryo sits. 

The albumen holds the yolk in position so that the embryo is always facing upward, closer to the heat. The blunt end of the egg has a special area filled with air.
